Autumn Apple Muffins
September 22 is the first official day of Fall, so welcome the season with the warm flavors of apple and cinnamon. These apple muffins are mostly healthy and make a great breakfast to start the day, or you can wrap them in the muffin wrappers for a school celebration or brunch. This is a simple recipe mixed by hand, so the kids can do most of the work.
Click on the image below to download the muffin wrappers. Print on card stock, then the kids can cut them out  just inside the dotted lines and then put them together with glue or double stick tape.
Autumn Apple Muffins
Makes 24 regular-sized muffins. Preheat oven to 375.
Mix in a large bowl and then set aside:
- 2 small apples, peeled and diced
- 1 cup unsweetened apple sauce
- 1/4 cup apple juice
- 1 cup oat bran
- 1/2 cup vegetable oil
- 2 eggs
- 1/2 cup brown sugar
- 1/4 cup molasses
In a separate bowl, mix:
- 1 cup wheat flour
- 1 cup unbleached white flour
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon allspice
- 1/4 teaspoon salt
Blend wet and dry ingredients together. Scoop into lined muffin pans and bake for 15-20 minutes, or until toothpick comes out clean. Happy Fall!
